I got this recipe from a friend today. She makes it for her cup cakes.

Mix equal parts Philadelphia creme cheese and melted white chocolate. Spread out on top of cup cakes when the cup cakes have are cool (the cheese and chocolate will melt and the cheese can seaprate if the cup cakes are too warm when you put on the frosting).

This frosting is easy to make and tastes good. It's even good without the cup cakes smileys/wink.gif

 
I make a banana cake with white chocolate cream cheese frosting and here are some tips...

...to ensure a delicious outcome:

1/2 teaspoon of vanilla per pound of cream cheese is a great addition.

Make sure you scrape what ever bowl you are using to beat the frosting very, very thoroughly. If the cream cheese isn't completely incorporated, you'll have lumpy frosting. Still tastes great but the appearance can suffer.

Use a good white chocolate. Check for cocoa butter in the ingredients. Trader Joe's White Chocolate baking chips lists cocoa butter as the second ingredient. Good stuff.

I add powdered sugar to taste. I add about a cup per 3 bricks of cream cheese and 11 oz. of white chocolate. Since I don't use equal amounts of cream cheese and white chocolate, the frosting often needs a hit of sweetness. I like it this way, as I can control the sweetness level and adjust to my liking.

I find it best to refigerate the cake layers before frosting them. It helps this very soft frosting to stick. After the cake has cooled in the fridge, I do a crumb coat, then back into the fridge to set. Once cooled, I frost again. Leave the frosting at room temp while the cake is cooling.

The frosting will set in the fridge. If you are going to transport this cake (or cupcakes) on a hot day, I strongly recommend cooling them in the fridge first to set the frosting.

We have a good friend who loves my recipe for banana cake with this frosting. Her birthday wouldn't be the same without it. We brought her one last week, so all this is fresh in my feeble mind!

Croissants stuffed with white chocolate frosting should not be on my menu right now (but when you say it like that, who can resist? *LOL*)
