I think I copied this off RecipeSource. I have made it with the zucchini a number of times and have really enjoyed it. I bought some apples at Costco the other day and they were fairly tasteless and a bit mealy. I couldn't bring myself to throw them away so I subbed diced apples for the zucchini. WOW, it was great!
Whole Wheat Zucchini OR Apple Bread
2 eggs
1 C applesauce
2 t vanilla
1 1/2 C sugar
2 C grated zucchini or chopped/diced apples
1 sm mashed banana
2 C AP flour
1 C whole wheat flour
1 t baking powder
3.4 t baking soda
1 t cinnamon
3/4 t salt
1 C chopped nuts
1/2 C golden raisins
1/2 C dark raisins
Preheat oven to 350°F. Grease and flour OR spray with non stick spray, 2-8x4 pans.
Beat together the eggs, applesauce, vanilla, sugar, zucchini and banana.
In a large bowl stir together the remaining ingredients. Add egg mixture and stir just until combined.
Bake 45 min - 1 hour or until toothpick inserted in center comes out clean.
Notes:
*This is a beautiful dense, moist bread.
*I like to add 1/4 C ground flax with the dry ingredients.
*Our nuts of choice for this bread are walnuts.
*Can also make 1-9x5 and 2-6" pans.
*I have thoughts of subbing dates for the raisins in my next apple version.
*I used applesauce that was only slightly sweet (some of my homemade variety!)
