WILD RICE WITH SCALLIONS
1 1/2 cups wild rice, rinsed well
1 tbls olive oil
3 cups chicken broth
1 tbls fresh lemon juice
2/3 cup thinly sliced scallions including green part
In a heavy saucepan cook the rice in the oil on
moderate heat, stirring until the rice is well
coated. Add the broth and bring to a boil.
Reduce the heat to low and cook the rice,
covered, for an hour or until the broth is absorbed. Stir in the lemon juice and scallions, adding salt & pepper to taste. Serve warm or at room temperature.
