This was a nice change. Very pretty also. My only note is that I thought the dressing a bit too sweet - will use less sugar next time.
Winter Orange Salad
Vinaigrette:
2 T. of sugar
2 T. minced shallots
3 T. sherry vinegar
2 T. fresh orange juice
1 tsp. dried mustard
2 tsp. extra virgin olive oil
½ tsp. salt
Salad:
3 cups orange sections (about 3 large oranges)
3 cups torn romaine lettuce
3 cups torn red leaf lettuce
3 cups baby spinach leaves
1 cup thinly sliced red onion
½ cup (2 oz.) crumbed feta cheese
1. To prepare vinaigrette, combine first 7 ingredients in a small bowl; stir with a whisk. Set aside.
2. To prepare salad, combine orange sections, romaine, red leaf lettuce, and spinach in a large bowl. Add onion and cheese. Pour vinaigrette over salad mixture: toss gently to coat.
Yield: 6 servings
