Winter Soup from “Winners” published by the Junior League of Indianapolis

3 medium onions, chopped

1 pound ground beef

1 clove garlic, minced

3 cups beef stock

1 (28-oz) can whole tomatoes

1 cup sliced celery

1 cup peeled and diced potatoes

1 cup sliced carrots

1 cup trimmed and cut-up green beans

1 (12-oz) can corn, drained

1 cup dry red wine

1 T chopped fresh parsley

½ tsp dried basil

1 T salt

¼ tsp dried thyme

fresh ground pepper

Cook onions, beef and garlic together in a Dutch oven over medium heat until meat is browned. Drain grease completely. Add remaining ingredients. Bring to a boil. Reduce heat and simmer for 1 hour. Season to taste.

We make this soup every winter and have varied it by using spicy turkey sausage in place of the ground beef with good results. Sometimes, we add 1 cup cooked rice at the end.
