They're calling for snow on Sunday in MD and for some strange reason, I always have a craving for this soup when they call for winter weather.
Winter Soup from “Winners” published by the Junior League of Indianapolis
3 medium onions, chopped
1 pound ground beef (I use ground turkey)
1 clove garlic, minced
3 cups beef stock
1 (28-oz) can whole tomatoes, undrained
1 cup sliced celery
1 cup peeled and diced potatoes
1 cup sliced carrots
1 cup trimmed and cut-up green beans
1 (12-oz) can corn, drained
1 cup dry red wine
1 T chopped fresh parsley
½ tsp dried basil
1 T salt
¼ tsp dried thyme
fresh ground pepper
Cook onions, beef and garlic together in a Dutch oven over medium heat until meat is browned. Drain grease completely. Add remaining ingredients. Bring to a boil. Reduce heat and simmer for 1 hour. Season to taste.
We love it with big hunks of bread for dipping!
