This one feels a little like the stuffed cabbage rolls (aka golumpki/gouampki) that my Mom used to cook when I was a kid--minus the cabbage, of course.
(I usually use at least the full cup of cooked rice, and add whatever seasonings I'm in the mood for. This is a very versatile recipe:
WONDERFUL MEATLOAF
Prep time: 5 minutes
Cook time: 45 minutes
Ready in: 50 minutes

"Ground beef is mixed with cooked rice, onion, brown sugar, and ketchup, and baked in a loaf pan for 30 minutes. It is then topped with additional ketchup and baked for 15 minutes more."
1 lb. ground beef
3/4 cup to 1 cup cooked rice
1 Tbsp. brown sugar
3/4 cup chopped onion
1 Tbsp. ketchup
1/2-cup ketchup
Preheat oven to 350º F. (175º C.)
In a large bowl, combine the beef, rice, brown sugar, onion and 1 tablespoon ketchup. Mix well and place in a 5x9-inch loaf pan.
Bake at 350º F. (175ºC.) for 30 minutes. Spread remaining 1/2-cup ketchup over the top of the loaf. Bake for 15 more minutes.
