2 lbs yellow-eyed beans
2 onions (chopped)
2 Tbs sugar
1 tsp salt
1 tsp black pepper
2 Tbs molasses
1/2 tsp dry mustard
2 1/2 cups boiling water
1/2 lb salt pork cubed (I used ham)
Wash beans and soak overnight. In the morning, remove and discard any beans that have floated to the top and rinse beans again.
Place in an ovenproof pot or bean pot and add onions, sugar, salt, pepper, molasses, and dry mustard. Cover beans with boiling water, and add salt pork.
Cover pot and bake for 8 hours at 225-250 degrees F, stirring occasionally, checking beans for water and tenderness.
