Zucchini "Apricot" Jam

6 cups zucchini -- peeled and grated(use food processor,remove seeds if zukes are big and seedy)

5 cups sugar

3/4 cup crushed pineapple in juice

1/2 cup lemon juice

2 (3 oz) pkgs peach or apricot Jello or one large package

Directions:

Cook zucchini and sugar for 15 minutes. Add pineapple and juice. Continue cooking for 6 minutes. Remove from heat and add Jello. Stir well and seal into jars.

makes about 5 pints.

 
I would cook up a cup of dried apricots and whir in a food processor and add to the mix.
