Woman's World Recipe - 3/14/06
Basic Vanilla Cupcakes (12 Ways)
Makes 12 servings
1-3/4 cups all purpose flour
1 pkg. (3.4oz.) instant vanilla pudding mix
2 teaspoons baking powder
1/4 teaspoon salt
1-1/4 cups milk
1 egg
3/4 cup sugar
1/2 cup butter, melted, cooled
1 can (16 oz.) vanilla frosting
Preheat oven to 375 Degrees F. Line 12 muffin cups with cupcake liners.
Combine flour, dry pudding mix, baking powder and salt. In another bowl, combine milk, egg, sugar and butter. Stir in flour mixture until smooth. Divinde among muffin cups. Bake 22-25 minutes or until toothpick inserted in centers comes out clean. Cool. Frost.
Variations:
M&M - Stir 1/2 cup Mini M&M's into batter. Spread cupcakes with vanilla frosting; top with Mini M&M's.
Chocolate Malt - Stir 1/2 cup malt powder into batter. Spread cupcakes with milk chocolate frosting. Top with halved chocolate malt balls.
Mint Chocolate Chip - Stir 1/2 cup mini chocolate chips into batter. Tint and flavor 1 can (16 oz.) vanilla frosting with green food coloring and 1/8 tsp. mint extract. Spread over cupcakes, top with chopped Andes Candies.
Lemon Poppy Seed - Stir 4 teaspoons grated lemon zest and 1 Tbs. poppy seeds into batter. Spread cupcakes with lemon frosting; top with fruit slice candies.
Chai Spice - Stir 1/4 teaspoon each ground cinnamon, ground cloves, ground caradom and white pepper into batter. Spread cupcakes with vanilla frosting. Sprinkle with ground cinnamon.
Sour Power - Stir 1 envelope (0.13 oz.) unsweetened cherry-flavored Kool-Aid soft drink mix into batter. Spread cupcakes with vanilla frosting; top with sprinkles.
Peanut Butter & Banana - Substitute instant banana pudding mix for vanilla. Stir 1/3 cup creamy peanut butter into 1 can (16 oz.) vanilla frosting; spread over cupcakes. Top with chopped peanuts.
Double Chocolate - Substitute 1 package (3.9 oz.) chocolate pudding mix for vanilla. Stir 1/2 cup mini chocolate chips into batter. Spread with chocolate frosting. Top with chips.
Spumoni - Substitute pistachio pudding mix for vanilla; stir 1/2 cup mini chocolate chips into batter. Spread cupcakes with strawberry frosting; top with cherries.
S'mores - Stir 1/2 cup mini chocolate chips into batter. Spread cupcakes with milk chocolate frosting; top with graham cracker pieces and mini marshmallows.
I have not tried these yet, however, thought this would be a useful recipe to have in your files. It sounds very good and I would not use canned frosting, but would make my own from scratch.
