A friend in Denver sent me this recipe and it looks so good I need to share this recipe
Gingerbread Pancakes
1 ½ cups flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
2 tsp ground ginger
2 tsp cinnamon
1 tsp cloves
2 eggs
½ cup brown sugar
1 cup milk
½ cup water
2 Tbsp molasses
4 Tbsp unsalted butter, melted and cooled.
Sift the flower, baking powder, baking soda, salt, ginger, cinnamon, and cloves into a bowl. Put the eggs and brown sugar into a second bowl and beat well with a wire whisk. Beat in the milk, molasses, cooled melted butter and ½ cup water. Add the flour mixture and beat once or twice until almost smooth. Don’t overwork the mixture. Cook on prepared, greased griddle.
Apple Marmalade
2 cups of apples, peeled and diced
2 Tbsp butter
3 Tbsp sugar
2 Tbsp whipping cream
1/2 tsp cinnamon
In a medium-size pan, melt the butter over high heat, add the apple and sugar. Cook them until carmelized. Add the cream and bring up to a boil. Add cinnamon.
To serve pancakes, I like to lightly butter them, add the marmalade and a light stream of vanilla or apple syrup (or I like to melt extra butter in the marmalade to make it more "syrupy" instead of using store bought). Top with whipped cream and a dusting of powdered sugar and cinnamon.
