Orzo Gratin
"If you prefer not to cook with wine, use 1/2 tsp. instant chicken bouillon granules dissolved in 1/2 cup hot water instead."
10 oz. uncooked orzo pasta, 1-1/2 cups
1/4 cup butter melted
1 pint cherry tomatoes, 2 cups, halved
1/2 cup shredded mozzarella cheese, 2 oz.
1/2 cup white wine
1 small clove garlic, minced
1/4 cup chopped fresh parsley
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup grated Parmesan cheese
Cook orzo according to package directions; drain.
Meanwhile, preheat oven to 350 Degrees F. Coat 1-1/2 quart baking dish with cooking spray.
Combine orzo, butter, tomatoes, mozzarella, wine, garlic, parsley, salt and pepper. Stir in Parmesan cheese. Transfer mixture to baking dish. Bake 30 minutes or until bubbly.
