Recipe to check out: Blackberry cobbler

The darn web site won't allow cut/paste, so here it is typed out...

Blackberry Cobbler

1-1/2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 cup butter, softened
1/2 cup sugar
1 large egg
1 tsp. vanilla extract
1/2 cup buttermilk
8 cups blackberries (approx. two 1-lb. frozen bags), fresh or frozen
2/3 cup sugar
3 tbl. cornstarch

Preheat oven to 375 deg. Set aside a Bakers’ Edge pan or lightly grease a 9x9” baking dish. In a medium bowl, whisk together flour, baking powder and salt. In a large bowl, cream together butter and sugar. Beat in egg and vanilla extract until smooth. Stir in buttermilk and flour mixture until no streaks of flour remain and batter is smooth.

In a large bowl, mix together berries, sugar and cornstarch. Do not defrost berries if using frozen. Spread evenly into prepared baking dish, sprinkling any excess sugar over the berries. Top with cobbler mixture, dropping it in large spoonfuls over the berries.

Bake for about 40-45 min. or until berries are bubbly and cobbler is a light golden brown. It may require a few extra minutes if using frozen berries.

Cool for at least 15 min. before serving.

Oh man, it's starting again. Berry Envy. Freud, Jung, Nietzsche...they

ALL avoided this topic.

The best blackberry I remember: camping in Pennsylvania's Allegheny Forest near Kinzua Dam and picking thumb-size blackberries right off bushes lining the highway.

The best blueberry I remember: Picked directly from a large bush in a coworker's back yard. They were huge and sweet. I never knew blueberries could be that good.

The best strawberries I remember: getting a paperbag full from the quintessential grandmother in a Paris farmer's market near the Sorbonne.

The best raspberry I remember: I can't even remember, that's how long it's been.

I think I'll go look at ink blots.
