Recipe to check out: Raspberry Cheesecake Truffle Brownies

Ok, you have all the basic food groups here....

what's not to like???
I'm printing this out for the "to try" file.

 
The only thing that worries me is the unusually long baking time, but it's necessary for the

cheesecake layer.

 
These were yummy- a few things I'd do different if I make again..

I did overbake them smileys/frown.gif the cheesecake layer kept cooking after removing from the oven & dried out a bit, so watch really carefully! I'd probably switch the lemon flavor in the cheesecake to plain vanilla, I think it outcompeted the raspberry on top. I might try raspberry flavor such as chambord in the brownies too. This was my entry for a dairy month dessert contest at work- didn't win, but gained some ooooohhhhs.

Good tips. Was the one hour of baking as per the recipe too long, or did you bake them longer?

 
Well, it was late at night, so I'm not totally sure!!! I think I left them in a little longer...

I'd doubled the recipe to feed 30+ people and ended up with a pan that probably made the layers slightly deeper than the original recipe intended. I'll plan to take them out of the oven next time when the cheesecake is just setting- I think the heat from the brownies will finish it off & will keep the brownie layer from getting too dry. Still really yummy!!
