Recipes for market-roasted chicken?

I bought an extra chicken at Costco (in their packaging, both tipped the scales at 4.75 pounds--huge!). I stripped the meat from one and made some stock. DOes anyone have suggestions for using the meat? I thought I had bookmarked several such recipes, but I haven't found them. I will use some to make chicken enchiladas, but I still have plenty for another use. Ideas? Thanks.

 
Mexican Chicken Casserole, Pasta with Chicken and Veggies, toss in some fresh lemon,

parsley, parmesan and butter. Sandwiches, use in a salad for dinner, use in a rice salad or any type of grain.

 
Thanks, the Costco thread at #263 is the one I remembered.

I think enchiladas with chicken and Hatch green chiles may be a winning combination.

 
Closet Cooking's King Ranch Chicken Casserole

One of my husband's all-time favorites (I use the whole rotisserie chicken rather than the mere 2 cups the recipe calls for.) It's one of the few things I make that we are willing to eat for leftovers more than two days in a row.
