I'm probably telling my age a little here, but when I was in school our cafeteria ladies baked great bread. When I was in junior high we would skip the meal and just buy two warm rolls for a nickel and a carton of milk. This batter bread is one of theirs too and is terrific, easy and pretty too. The rolled wheat (looks rather like thickish oatmeal) can be purchased at any grocery with bulk items (like Whole Foods) or a health food store. These recipes were published in a cookbook the Denton Food Service ladies put together.
Batter Bread
1/4 cup sugar
1 tbsp dry yeast
1 1/2 cups warm water
2 eggs
3 1/2 cups flour
1 cup rolled wheat (wheat flakes) plus more to sprinkle on top
1 1/2 tsp salt
1/2 cup dry milk
5 tbsp melted butter, plus more for brushing top.
Dissolve sugar and yeast in warm water. Beat in eggs then butter. Stir together dry ingredients. Slowly beat in to liquid ingredients. Pour in well greased 9" square pan. Sprinkle top with some of the wheat flakes. Let rise until doubled. Bake at 375 for approximately 30 minutes. Brush top with butter while still warm. Cut in squares and serve warm.
Buns
Nice soft tall yeasty rolls:
2/3 cup sugar
2 tsp salt
2 tbsp butter
1 tbsp lard (or additional tbsp butter)
2 cups boiling water
2 eggs, well beaten
1 cake yeast
1/2 cup lukewarm water
8 cups flour.
Dissolve yeast in 1/2 cup lukewarm water. Combine sugar, salt butter, lard and boiling water in large bowl. Stir to mix. Cool. Add eggs and yeast mixture. Gradually mix in flour then knead well until smooth and elastic. Let rise until double. Punch down. Let rise 1 hour. Form in largish balls and place in pans (13X9 works well) just touching. Let rise two hours. Bake at 400 for 15 minutes. Brush tops with butter while still warm. Yields 3 dozen.
