...from "diners, drive-ins and dives", I did go there for lunch today.

The carnitas were good, and different from any other I've ever had.

Joe, they were browned, but they weren't greasy, so I wonder if they browned them in a hot oven and not on a grill or in a fry pan.

I still like mine better ;>, as I feel they are closer to roast pork. I like a more subtle spice profile, and while interesting, the cinnamon is not my favorite spice with pork.

I'd go there again. Not soon, but again.

PS: They wouldn't give any details about the recipe. They wouldn't comment on the condensed milk at all.

is much appreciated. I think I'll stay with your standard, as I already use your carnitas recipe for the pork portion of Coyote Cafe's posole.

 
Interesting The milk might help the browning with less grease. I also like subtle spice combinations

The pork should not be overpowered.
