Remember Chicken Cacciatore? It seems to have fallen out of favor

and I rarely hear about it anymore. Today was the day as I had two large bone-in, skin out beautiful organic chicken breasts.

I browned them up nicely, set aside. I put celery, red onion, and a small garden carrot through the food processor to mince, sauteéd that a little. Threw in a little white wine, let reduce, then add two cups of my home made roasted tomato sauce, red pepper flakes, rosemary, hydrated porcini mushroom pieces, some of the mushroom broth, fresh creminis, white mushrooms, and cooked a bit. Put the chicken back in and it is gently cooking now. Smells no nice. I will gently heat it back up this evening and serve with buttered spaghetti with fresh parsley, and green beans tossed with lemon juice, and a little butter.

Maybe a few sliced garden tomatoes on the side, too.

Having a few things in the freezer sure makes pulling a nice dinner together easier. My favorite things to have ready is the tomato sauce, chicken and beef broth (for special dishes) applesauce, blackened Hatch chilies, one or two kinds of home made soups, and a bunch of jalapenos, and various peppers from the garden last year.

This years garden was a bust and we could not plant as much with the drought. Even my chives gave up this year:(

 
This sounds so good and a lovely menu. Cacciatore used to be one of my husbands favorite dishes. As

you noted, other dishes came along and I've not made it in years. Another dish we really liked was chicken Parmesan, made with boneless breasts topped with thick slices of eggplant before sauce and the cheese.
