Report out: Breakfast Cooking Class went GREAT!

The kids were just awesome. They loved all the 'taste tests' that I had planned, making the yogurt/granola/fruit parfaits (huge hit - thank you for the suggestion!), the 'apple pie' oatmeal (oatmeal packet, chopped apple, brown sugar, and cinnamon), and the breakfast burritos. There was nonstop chatter, questions, and laughter.

The eggs were especially fun. I first taught them the Cooks Illustrated way of 'fluffy scrambled eggs' - and many really liked it that way and were so surprised at the cooking method and the results. But as I prepared each girl's eggs to order (They weren't allowed use the commercial gas ranges at the community center) 3 of them asked for 'normal scrambled eggs' - "ya know, the dry kind'smileys/smile.gif Which I gladly did!

Instead of nametags I had each girl write their name in permanent marker on their aprons - they have fun 'personalizing' them.

And they asked me to continue these lessons w/ them. I'm so happy they liked it, that they learned, that we bonded. I was enveloped in hugs from the girls before they left - what an awesome group. Also - we decided they were coming to our home in August for an afternoon of pontooning, kayaking, and then a BBQ.

Next up: school lunches. Which I don't have a clue about (no children and I don't eat lunch). So when I have a date for the next one (probably in 3 or 4 months) - I would love to turn to all of you again for your input!

Once again - thank you for all the great input/ideas/recommendations. The class was really a result of them.

Did the girls like their kitchen tools?

Since you bonded with all the girls you must have bondend with the girl who wants to become professional?

 
They loved 'measuring' things....

and the fact that they could take home the measuring spoons, cups, aprons, and spatulas.

Yes, definitely bonded w/ Na'eisha - the girl who wants to become a professional. She's 16 and is amazing in the kitchen (as well as, despite a horrific home history/situation, she is outgoing, positive, and lovely). She lives w/ her grandmother and I think she (Na'eisha) does the cooking in the family. She knows so much about food/cooking. I think she could be the next "Food Network Star"!smileys/smile.gif I'm already thinking about how I can support her in her desire to go to Schoolcraft College - a college about 40 minutes from her home that has an outstanding culinary school. I'm sure we can make it happen!

Deb, I am so PROUD of you! What a great thing to do for this group of kids.

You certainly are in inspiration to me! I can't wait to hear about the next class......

 
What about asking her to do a brief demo of something at your next class. Or come up and sous chef

with you while you're cooking. Might give her more confidence, make her shine, and possibly inspire the other gals to do the same at a future class.

Great idea...

although confidence is not something this gal is missing!smileys/smile.gif - she LOVES being in the spotlight and appears, at least w/ respect to cooking, to be very confident in herself. Which is truly a blessing considering what she has faced in her life. As for confidence in other areas in her life I don't know...she sure puts on a strong and good front.

Since I'm pretty sure that she and I will have a one-on-one mentoring relationship I was going to see if I could invite her up the night before the BBQ at my house and we would spend that night and the next day preparing for the BBQ - cooking side by side. I would love her to teach me some of the Southern cooking she so loves.

What fun! Speaking of breakfast… Rec: French Rolled Omelet with Scallions and Swiss Cheese

After much practice, I’m almost an expert at making this type of omelet. This past weekend was my biggest success. I use my heavy-duty 10” nonstick fry pan. I use free-range organic brown eggs. I finely slice one scallion including half of the green and about a quarter cup of Swiss cheese. Swiss Emmenthal is best.

If you haven’t made this type of omelet, I urge you to try it because it’s sooo good!

Could you please post

the Cook's Illustrated recipe for fluffy scrambled eggs? I make them a lot and sometimes they come out great and sometimes not.

I went to the site and saw that you have to be a member to get their recipes...

Hot heat, milk, and what other secrets???

By the way, I make great fritattas, but my scrambled eggs are not consistent. I have been making fritattas almost everyday and am sure to include lots of vegetables in there.
