The onion rings were great. It took a while to get them put together and it made a mess of my pan but it was so worth it. I had a sheet of parchment in my pan and it wasn't enough as the droppings got under the edges. Next time I will wrap the pan in foil and include the rims. I may experiment with a single bite on a toothpick version for serving at a party. Also, I had thick cut bacon so I stretched it during the brown sugar application and while wrapping. That seemed to work OK but if I was buying bacon for that recipe I wouldn't buy thick sliced.

The black bean pepper jack patties were just OK. Good flavor but a dry crumbly texture. I 'm not likely to make them again.

 
I had the same issue with them Charley... won't make them again either

being the carnivore that I am. When I want a burger, I will have a burger. I think the idea is great but it was just not for this meat eater.

 
Too bad it did not work for you both...

I actually made them three times already, my favorite veggie burger ever! Did not have any problems with them crumbling, but sometimes I leave them in the fridge from lunch time until dinner

I've found there is a big difference between brands of bean products, especially

black beans. Right now, I can't recall if I used dried beans or the canned. Mine were just not tasty and they crumbled. I would have like to of grilled them, but pan fried them instead. I do all my dinner prep in the morning, so I know they were in the fridge all day, covered. There were not awful by any means, and when paired with fresh garden tomatoes, and grilled onions they were ok.....just not hamburger.

I'm still trying to figure out WHY the taste was so different from first batch to second batch, using the exact same ingredients and exact same screw-up (double cheese).

I gave friends some of the first smooshier batch and they turned it into burrito filling, which they loved

I used dried beans. Perhaps canned are creamier. When the paste was in the FP I was thinking it looked pretty dry to call it a paste and considered adding some olive oil. Perhaps I should have.

 
I doubt it could work with cooked dried beans....

... you would have to get the consistency just right, and maybe the stuff that is canned has other components added to it, changing the texture...

I would never have these as a substitute for a "real" burger, it's not the point, but as far as veggie patties go, I think they are excellent

 
I've been making them about once a week using TJ's Organic Black Beans

I almost double the cumin, cilantro and cheese and have no problem with them falling apart. Served them to vegetarians two weeks ago and they asked for the recipe. I REALLY love these!!

 
ohhh! I wonder if there was more water left on the first batch when I rinsed, then pureed them?

That would explain the creaminess of the first batch.
