While I should have cut them a little thicker, the texture of the butternut squash oven-roasted fries was just as good and maybe a little better than my best efforts at sweet potato fries. I will make them again.

One large butternut squash, peeled and cut into half inch x half inch sticks. Coated with olive oil, seasoned with salt and a light dusting of good chili powder (I served them with ribs). Roasted in a single layer in a hot oven. I will make the sticks bigger next time or maybe try wedges.
