Results of crock pot caramelized onions= I'm getting rid of the crock pot.

Third time I've used it= third time the results were really bad.

DH woke me at 5 am to tell me the smell was too bad to allow sleep. Staggered out to the porch (temp was 22F.) and almost passed out. After 16 hours the onions were black around the edges and steamed in the center. I tasted them later and the whole pot went down the disposal.

I will NEVER use a crock pot again!

 
Don't give up Cyn. Just put it away for awhile. We'll find you a good recipe. Actually, I know of

just one person who had success with this onion recipe. I tried it and it never browned enough for me, but I didn't want to discourage you from trying it since it works for some people.

 
Never have time to stand and stir onion for soup, put in roasting pan and add olive oil stirring

till they seem to be lightly coated. Cover tightly with foil. Put in oven @ 350F for 3-4 hours (this is while I am doing breakfast) take out every hour or so and stir, wrap and put back.
Usually they are nice and brown, and you know the smell--if not, at that point put them in soup pot and proceed with stiring till the magic happens! and proceed--
I am usually working with around 20# of onions, don't measure olive oil, just drizzle and stir till it looks right.

 
I have good luck with crock pot cooking, I did order a new book today that has good reviews from

buyers, The Gourmet Slow Cooker by Lynn Alley. She says that you should take off the lid and stir the food several times during cooking. I believe this too and have always done it. The food thickens this way.
Amazon has this book on sale now. There is an international one, covering Mexican, Indian, etc. and a regional version. I ordered the regional because someone said they liked it better. Both are small books and not a ton of recipes, which I like.

 
Mine came out pretty good, except I didn't leave them in there for

nearly 24 hours... more like 6 or 7. I think they did get a little crusty-black on the edges, but the insides were good. With enough butter, anything tastes good ;o)
