Reuben Casserole

I have a recipe; has anyone ever tried this? basically kraut, shaved corned beef, 1000 Island dressing, swiss cheese, tomato slices and bread crumbs. I thought I'd do it w/o the bread crumbs to lower carbs (seemed kind of unnecessary to me).

 
If it's not too much trouble, could you post that?Used to have recipe for that LONG time ago.Thanks!

 
Pam, I had a luncheon last month and served this along with manicotti, the rueben casserole was a

huge hit, but I can't imagine not having the rye bread. I processed the bread in my food processor and sprinkled it over the top. I ended up giving out the recipe to quite a few ladies. (This was the one dish I thought may not go over well. It is delicious.)

 
I have made it like this, except I decrease the amount of

1000 Islands dressing to about a 1/2 cup (too greasy), and I layer the bottom of the pan with the pumpernickel bread... my top layer is the shredded cheese.

But they all sound pretty much the same.

 
Thanks Dawn and Randi, sounds better actually. old had cream of celery soup or something wierd like

that? I do think the sliced tomatoes would be good, maybe added on top as a garnish?
Pam isn't that funny when it happens. So many time I have had a new recipe and added it to two other entrees ( to try it out) with out making a lot and that's what everyone goes for. Go figure.

 
Hmmmmmm.

I've had a Reuben casserole in my to-try folder for two days longer than forever, but never got around to it.

I was about to. But then, in conjunction with a friend in Michigan, came up with a way of making rye gougeres with a corned-beef/saurkraut filling. Presto! Miniature Reubens that are the bell of any ball.

 
Here Ya G0

Rye Party Puffs

1 cup water
1 stick butter
1/2 cup all purpose flour
1/2 cup rye flour
1/2 tsp garlic powder
1/4 tsp salt
4 eggs
1 cup grated Swiss cheese
Caraway seeds.

Preheat oven to 400 degrees.

In a saucepan over medium heat, bring water and butter to a boil. Add flours, garlic and salt all at once. Stir until a smooth ball forms. Remove from heat. Let sit 5 minutes.

Beat in eggs, one at a time, beating until smooth and satiny before adding the next egg. Mix in grated Swiss.

Drop the batter by rounded teaspoonfuls, 2 inches apart, onto a greased baking sheet. Sprinkle with caraway seeds. Bake 18-20 minutes until golden. Remove to wire rack to cool.

Corned Beef Filling

1 8-oz package whipped cream cheese
3 1/2 oz cooked corned beef, finely diced
1/2 cup mayonnaise
2 tbls finely chopped onion
1 tsp spicy brown mustard
1/2 cup packed, wrung-out kraut, chopped

In a mixing bowl, combine the filling ingredients. Mix well.

Split puffs. Add filling. Refrigerate until serving.

 
One thing to keep in mind

is that pate choux paste is one of the most versitile things you can use.

Make it sweet and you have the basis for profiteroles and cream puffs and eclairs. Make it savory and all sorts of happy things occur.

Maybe, if the interest is there, I'll start a thread on it when I get back from Florida.

It is a recipe by a good friend and it is absolutely delicious.
1 3/4C sauerkraut, drained and well rinsed
1 1/2# corned beef, shaved
1/2# Swiss cheese, shredded
4 TBS thousand island dressing
2 medium tomatoes, thinly sliced
Topping
1 stick butter
1 1/2C fine rye bread crumbs
In a greased 9X13 pan, layer the saurerdraut, corned beef, Swiss cheese, dressing and tomatoes. Sprinkle with crumbled topping. Bake @350* for 35-45 minutes. Cover with aluminum foil for more than half of th cooking time.
Serves 6-8

I need to cut it down to dinner for 2, but it sounds like a recipe that you can just put together by feel. We're doing 2 weeks of no carbs to re-start a weight loss program, so I was hoping I could do without the bread crumbs. Guess I better wait 2 weeks.

 
I'm interested. And have fun in Florida. We were there this time last

year. Drove down to the Keys then drove all the way up to Pennsylvania. The weather was just gorgeous in Florida.

 
thanks for posting Pam. I can't do carbs either so I'll make it without the crumb topping

and just toast some rye bread for my husband to dump his on smileys/smile.gif

 
Nice! Makes me want to go back. Still so many parts of Florida

we've not yet explored. A return trip is definitely "on the list".
