Hi Marg! Glad you enjoyed it.

Cathy told me you had posted about this and I'm using her computer to login. I think you can go just about anyway you want to go with vegetables and fruits with that dressing. I'm going to try it with peaches this summer when they come in (replacing pineapple), and whatever veggies I happen to have that week from the co-op.

The original inspiration for this was the "General Sri Wasano's Indonesian Rice Salad" from the Moosewood cookbooks (can't remember which one). I've deviated greatly, of course, but then that's me all over.

Done! Psst---Paris, cooking classes, Paris...Paris...Paris...

We were little red mud covered sights when we got back. The trail was a soupy swamp for most of the way. But the views off the Na Pali coast cliffs and the beautiful aqua waters of the Pacific crashing into the base of the cliffs, were stunning. We washed off in the ocean when we got back to Ke'e beach.

We're having an off day today; I feel like I've been beaten with a large stick, so we're going to the Princeville Resort to be bubbled, steamed, toasted, and massaged for the afternoon.

Cathy is feeding us like kings. And we were here for the culmination of her perfect chocolate chip cookie research!!! We'll post some photos later.

Only wishing we could have planned this to have been here during all that awful ice and snow LAST month. But it's still paradise here and I am quite contented to be here even though it was 75F and sunny when I left Cincinnati.

Now just have to plan the next great adventure! I'll do that when I'm lying on the beach tomorrow.
