Richard in Cincy - dying to make homemade kraut. Advice???

I am trying to decide whether to just get a good crock for a little bit of money or go ahead and invest in the German ones with a water gutter seal.

I'm going to go buy that book you recommended on fermenting and such tomorrow. My husband is going to kill me but I'm into trying all sorts of weird things these days with all my local foods. I'm going back to my roots canning and preserving. I might even get brave and enter some stuff in the county fair smileys/smile.gif

 
Not Richard but I've made plenty of kraut in my time. I use "regular" crocks and

put dinner plates over the top of the cabbage and salt. No need for fancy German ones unless you really want to!
