I guess mostly the ham balls would be served as an appetizer, but I was wondering if and how they could be served as a meal. Does the addition of the little bit of bourbon in the meat mixture really do a lot to enhance the flavor?

They can be served as appetizer or as main course

Yes, bourbon adds that authentic Kentucky flavor, but you could leave it out and they'd be fine.
