Richard's Cranberry Relish...worried this would get lost...You have to make this!!!

Threw it together because I had half a bag of cranberries left over from Thanksgiving.

WOW!! This is so good! I sauteed a couple of pork chops, baked some sweet potatoes and piled this relish on the chops.

I will be making a larger batch to serve with the baked ham at our holiday brunch.

ps I threw the cranberries and walnuts in the food processor and pulsed. No orange marmalade so I used Elderberry and Orange Marmalade from Ikea. No mace so I grated a little nutmeg. I can eat this by itself!

Hmmm, leftover cranberries here, too. Can anyone tell me the weight of a small box of raspberries?

They come in 10 oz sacks, here.

 
My Publix bag of raspberries is 12 oz so I used a little less than halved the recipe.

2 cups of cranberries. I think 10oz is the weight of a small box.

I put the leftover in little Dixi cups so I can do shots while I decorate the tree and make quiches.

I'm so glad you tried this recipe. It's one of those where the end result somehow transcends the sum of its parts. I've had many recipes that somehow manage to make a black hole of nothing of many wonderful ingredients. But this one is sublime if I do say so myself. I've been making this in some form for around 20 years or so.

To those fretting over exact measuring, it's a very forgiving mix. I use to buy the raspberries in boxes, they don't sell them that way at my grocery anymore and I buy a slightly larger bag now. I just dump the whole thing in. But you should be aiming for 1.5-2 cups of raspberries for the complete recipe.

I also play around with the hooch, I did a grand marnier, bourbon, and vodka combo this year.

 
I had some Absolut Mandarin Vodka that was very good. With the citrus I would like to try some

dark rum. I could make a batch then portion it out and add different liquors to it.
