Roasted Garlic Potatoes
Slice a few potatoes (about 1 baking potato
per 3 people at a brunch), thinly.
Melt about 2 T. butter per potato.
Add as much finely diced FRESH garlic as you
dare (the restaurant where I had this was in
Helsinki and they even put garlic in their
beer (honest)). A medium clove per potato
isn't outrageous. (The longer you SLOWLY
saute the garlic, the sweeter (and less
garlicky) it tastes.)
Saute slowly for about 10 minutes or more.
Toss sliced potatoes in garlic butter.
Roast in oven at 400 degrees for 20-30
minutes until tender.
Cool and garnish with chopped fresh dill.
