This salad is delicious! A complete meal with nice crusty bread or a cheese and pickled jalapeño quesidilla.
My notes* I had Missouri Bill's Heirloom white beans on hand, so I cooked those the day before. They cook up plump and creamy on the inside. I roasted the shrimp as she said, put them off onto a paper plate, drained the sheet pan, and put the pine nuts in the same pan to roast. Saved me some clean-up .
