Yesterday I cut up one small butternut squash into bite-sized chunks (about 2 1/2 cups) put into a bowl and tossed with coarse sea salt, freshly ground pepper, organic coconut oil from TJ's and grade A amber, organic maple syrup ( 2 tablespoons). Then I added 2 tablespoons of fresh chopped sage leaves from our herb garden. Toss well and put on a non-stick foil lined sheet pan. Roast at 400 degrees about one hour, turning the chunks half way through.
What you get is a caramelized, slightly sweet bunch of chunks that are nicely browned and some candy like puddling on the bottom. We both had seconds and ate almost all of it. So delicious!
