I made up a recipe tonight to use up an onion, a box of grape tomatoes, and some chicken.
I sliced up an onion and caramelized it over low heat for about 20 minutes.
I sliced some garlic very thin and stir-fried it in olive oil. I then removed it to the onions. I stir-fried the chicken (seasoned with salt, pepper, and Italian seasonings) in the remaining olive oil.
As that cooked, I sliced up the grape tomatoes and added them to the onions, with about 1/2 cup of white wine and Italian seasonings. I simmered that into a sauce. Once the pasta was done, I mixed it all together.
I must say, it was pretty good, although more sauce would have been better. I think I'll add broccoli to it the next time. I'm usually not very good at improvising recipes, but it seemed to come together.
