ROYAL ICING:
3 1/4 cups confectioners' sugar (icing/powdered)
2 large egg whites
Water
Using an electric mixer on medium high speed, beat the confectioners' sugar and 2 large egg whites until white, thickened, and tripled in volume, about 5 minutes. Add water by the Tablespoonful until icing no longer holds a peak - (for extra flavor you can use orange juice or lemon juice in place of the water). Divide icing into smaller bowls and color with food coloring as desired. Makes about 2 cups.
