What an excellent recipe! I have a vegetarian friend who had an awful accident and now is quadriplegic and I cook for her once a week to help get protein and calories into her. She is very picky but loves big flavors. This REC fits the bill perfectly. It smells wonderful, is colorful and interesting. I did omit the jalapeno but substituted diced green chilis. That was the only change I made. I tasted the filling and know what the combo of flavors in it along with the tomato/wine mixture will taste like. Delicious!
