I've since made it with whole boneless/skinless breasts, and even pork tenderloin. It's good with just about any white meat, including the shrimp I mentioned in the post.

I have used unsweetened coconut that I toasted before coating the chicken. I got mixed reviews on that. Some liked it better than the sweetened coconut, some liked it less.

It is a good recipe, and I'm a tiki fan at heart.
Love the whole kitschy thing. The tackier the better!
