"Saigon" cinnamon - what did I just buy at Costco? I'm confused - also FYI good price on CChips

The label only says Saigon Cinnamon - and nothing else, no nutritional label, percentages, processing info, or actual type. I'm sure it's some type of Cassia vs. Ceylon, but at 2.59 for a big container it was super cheap. Also, it was lighter in color than what was left in my old container. I have some Penzey's Vietnamese cinnamon I've yet to open, but I wouldn't think it comparable.

FYI, shopping damages report: Costco has Nestle chocolate chips on sale this month for 2.50 off, for me that comes out to 7.99 for a 72 oz bag, or 1.33 per 12oz bag (currently these are on sale at my Safeway for 2.50 per bag). Even though these aren't my favorite chips, can't beat the price to stock up for the holidays.

 
It is Cassia, and Vitnamese & Saigon are used interchangeably depending

on what company is selling it. It should be about the same as your Penzey's. Maybe not quite as high quality or as fresh.

 
Vietnamese/Saigon cinnamon is very pungent. It is best used for a recipe such as

cinnamon rolls that requires a predominant cinnamon flavor. It would be overkill for recipes such as apple pie.
