Sally's Baking Addiction WW bread

I'm fed up with supermarket bread prices, so decided I should make most of the family's bread now that I have retired. I have been making Portuguese white bread for years, but I'm supposed to eat wholewheat. I tried the Sally's Baking Addiction WW loaf - it was So Easy and turned out to be delicious as well. Unfortunately, I'm supposed to cut down on bread, so it's in the freezer for weekend splurges. It took a long time because you make a sponge first, so there are three rises, but the hands-on time is low. I used King Arthur Golden Whole Wheat flour - used to be white ww.

She says to use the dough hook on the mixer for 8 minutes, which I did, then a bit of hand kneading afterwards. I tried that technique on my Portuguese bread, and it came out much better, like it used to years ago - clearly I have not been kneading it enough because I have less arm strength. Need to do some weight-lifting.
