Salt rising bread. Ever make it? Tips? Seems like QUITE an undertaking.

I'm jonesing for a challenge and I've never actually tried this stuff so, if you have any suggestions or experience you'd care to share, I'm askin'!

(Posting this elsewhere as well so if you're seeing this for the 2nd time . . . just think of it as deja vous all over again.)

 
Steve, you won't regret it. It's a bit of work but the flavor is beyond amazing.

It's been a couple years since I've made it, but now I'm going to have to get some started. This was a very popular bread when I grew up and it used to even be available in groceries from the local commerical bakeries. There are still a few of the old time shop front bakeries still making it here. I use the Joy of Cooking recipe.
