Sandi in Hawaii: how far ahead could I bake the Tassies from T&T? just the shells, and also

the pecan filled ones? I want to make these for my bookclub meeting, using chocolate pudding and lemon curd for 2 variations in baked shells, then the pecan ones.

If you're baking the shells, I would think that it would be like a sugar cookie...

I assume that you're just leaving them empty til the day you serve, then add your pudding and curd that day, so it should last several days.

Pecan ones should be good too. They're best on the day you make them, but if you keep them a few days, I'd refresh them in the oven for a short time on the day you serve.

But I'm just guessing - it usually disappears on the day I make them smileys/smile.gif

thanks Sandi. I didn't think about refreshing the pecan ones in the oven

I thinl I'll go ahead and bake them early. Yes, I'll fill with curd and pudding on the day. your lemon tassies are easy and great, but I can make the curd way ahead of time and get that out of the way.
