Sandra, don't know if you remember sharing this with me way back when you were in London (I think) and I was in NC hosting one of our family's Christmas around the World dinners. That year was Argentina and this dish was the hit of night. Even tho we are a dozen years and 3000 miles from there it still has a following and is requested for any potluck style get together. Wanted to share!

Ravioles Con Tuco (meat Sauce)....

Amount Measure Ingredient -- Preparation Method
3 lb stew meat1 can beef broth
1 can chopped tomato
2 whole carrots -- grated
1 stalk celery -- chopped
2 cloves garlic -- minced
1 whole onion -- chopped
1 whole bay leaf
1 sprig oregano
salt and pepper -- to taste
3 lb ravioli, cheese-filled
In a crockpot, put all ingredients. After a few hours, take the meat out, and with 2 forks separate it into bite size pieces and return to the crockpot. Keep cooking several hours and then adjust seasonings...it will be a very thick sauce with lots of meat and very intense taste...
Cook up the raviolis and serve with the tuco and lots of grated parmesan...
NOTES : This sauce is more of a stew than a sauce and is great over meat or cheese ravioli.
