Sorry to post so long, but I figured I should leave a recipe I like..

Martha Stewart:

Panko-Crusted Chicken Bites with Apricot Mustard Sauce

Ingredients
Serves 12.

Nonstick cooking spray
1/2 cup all-purpose flour
Coarse salt and freshly ground pepper
2 large eggs
1 1/2 cups panko breadcrumbs
2 tablespoons extra-virgin olive oil
1/2 cup freshly grated Parmesan cheese
Pinch of cayenne pepper
4 large boneless, skinless chicken breast halves (about 2 pounds), cut into 1-inch cubes
1 cup apricot jam or preserves
1/4 cup Dijon mustard
1 teaspoon chopped fresh thyme leaves

Directions

Preheat oven to 375 degrees. Line a baking sheet with parchment paper and fit with a wire rack. Spray with cooking spray; set aside.

Place flour in a large bowl and season very generously with salt and pepper. Whisk eggs in another large bowl with 2 tablespoons water until well combined. Place the breadcrumbs in a third large bowl, and drizzle with olive oil; toss to coat. Stir in cheese and cayenne and mix well.

Place chicken pieces in the seasoned flour and toss to coat. Working in 3 batches, shake off any excess flour from chicken pieces and transfer to egg mixture; stir to combine. Transfer coated chicken pieces with a slotted spoon to the breadcrumb mixture and toss until completely coated. Place the breaded chicken pieces on a rack-lined baking sheet, spacing them evenly apart. Repeat process until all the chicken is breaded. Bake until golden brown and chicken is cooked through, 18 to 20 minutes.
In a small bowl, stir the apricot jam, mustard, and thyme together until combined. Allow chicken to cool 10 minutes before serving with apricot mustard mixture.

Ok, I can take care of number 1... REC: Meatball Soup

This is my favorite meatball recipe - and the soup is good, too smileys/smile.gif Note: I often make the meatballs, lay them out in a shallow pan and freeze them. Then I can use a few as needed.


Meatball Soup with Escarole and Pasta
McCall’s Magazine, March 1999

3 (14 1/2) cans broth (2 chicken. , 1 beef)
1 cup tomato sauce
1/2 teas. fresh ground pepper

Meatballs:
1 lb. ground meat-loaf mix (ground beef, veal, pork) (note: I don’t like veal, so have never used it)
2 slices white bread, soaked in water, squeezed dry
1 small onion, grated or chopped very finely
3 tbsp fresh chopped parsley
1 large egg
1/4 teas. each, salt & pepper

1 tbsp olive oil
2 cups shredded carrots
1 cup chopped onion
1 (2 oz. ) chunk Parmesan
3 cloves garlic, crushed
2 tbsp chopped fresh oregano or 1 1/2 teas. dried
3/4 lb. escarole, torn into small pieces, washed
1 cup uncooked tubetti or ditalini pasta

In saucepan, bring broths, tomato sauce, & pepper to a boil. Meatballs: In bowl, combine ingredients. Shape tablespoons into 24 meatballs. Heat oil in nonstick skillet. Add meatballs; brown, turning, 6 minutes.

In 5 or 6 quart slow cooker, layer remaining ingredients, except pasta, in order listed. Place meatballs on top; pour in hot broth mixture. Cover; cook on low heat setting 8 to 9 hours, or on high 3 1/2 to 4 hours, until carrots are very tender. (I do it in a stockpot on the stove for about 30 min.)

Add pasta; cover. Cook on high 15 to 18 minutes, until pasta is al dente. Discard Parmesan. Ladle soup into bowls, 3 meatballs per serving.

 
The DH took my turkey baster for his own. He uses it

to put water in the batteries of the cars. I bought a new one for the kitchen.

 
Okay - I'll attack the windshield problem...

two solutions that are fairly easy.

1) I bought a big package of the yellow microfiber cloths at Costco for about $14 - much cheaper then Pampered Chef and while you don't have a choice of colors - you can always spot the neon yellow ones! Keep at least one handy in the car for quick window wiping.

2) Easy cleaning - windex wipes! Keep a container in your car.

Either way you still have to exert some work but still easier than pulling out the spray windex and paper towels.

So in that case - try the GLASS WIZARD! - might make it a little easier.
