supposedly not only fool-proof, but can be made ahead of time. It would be perfect for a Mother's Day brunch. I love how she picks off the tiny top, adds crème anglaise and then puts it back. Like finding the Cracker Jack prize!

Her new book (from the library) is KILLING ME! There are at least 10 different recipes I want to try, but I also promised myself not to buy any more recipe books for a while.

Killing me, I tell you.

There are these fabulous looking Korean chicken wings, tempering chocolate with a microwave, the soufflé images (a full page of images showing exactly how to get that perfect little swirl and what you have to do to make sure you don't screw it up), baked Arctic char, a great hint about slicing apples for apple galettes, a gorgeous hazelnut dacquoise, cauliflower saag paneer (where you make your own cheese), chai-tea panna cotta...

I'm dying here.

 
I'm going to try and describe her souffle shaping steps

1. Prep ramekins (butter/sugar) and then add enough filling so it mounds above the height of the ramekin.

2. Using a spatula, shape/smooth the filling into a cone shape. Remove any filling from the ramekin rim or side.

3. Put your index finger in about an half inch from the edge and TURN THE RAMEKIN (with the other hand) to make a trench (she specifically says NOT to move your finger).

4. Now take the filling on your finger and plop it in the center (this will make the little top knot).

5. Take a small off-set spatula and scrap/flatten the filling from the trench out to the rim. This will provide a flat surface.

6. Again, make sure the edges are all clean. Bake.

I miss not seeing Sara's shows on TV anymore. She is a great chef, a real person,

and a no-nonsense teacher.

 
Oh, I don't watch him either, but....

whenever I turn the TV on, he is on the FoodTV

so either I switch the channel quickly or reach for the TiVo saved programs

it is basically impossible to avoid seeing the man. Very few types irritate me as quickly as he does. I dislike pretty much everything about him.
