Sat Six: I have been having fun with my new electric pressure cooker.

I have to admit that I was REALLY intimidated by it. Not the size, but how to use. I grew up, with my parents instilling the fear of god in me when they used theirs. They used it once, every summer to cook corn. We had to run from the kitchen, for fear of explosion. Anyway, after years of therapy : ), I decided to purchase one for christmas. I stared at the box for literally weeks. I came up with every excuse possible to not use it. (I wasn't feeling well, I didn't read the directions enough, its Wednesday, etc....) Anyway, I finally dove into it last week. I LOVE it!!! I am making something / trying a different recipe every day.

I made:

- Judy's Coq a vin (rec in thread above....VERY good) ((Thx Judy! for rec and web link))

- meatballs (frozen, were the "fluffiest EVER" as reported by a friend)

- chili

- gumbo

- rice pudding

- butter chicken

- rice

- boiled peanuts (Did not go over well, but had to use roasted vs. green, dh did not like the texture)

So, I am having fun with my new kitchen gadget! It's not necessarily the recipes being the best, (Chili tasted similar to my old standby chili), but the technique is fun and so easy. Not sure if that makes sense.... But I am enjoying the convenience.

 
Yep, green/raw for boiled peanuts. You'll enjoy your PC even

more for things that really require a long cooking time--stews, shanks, dried beans, split peas.
I generally only get mine out if something is going to take a couple of hours to cook on the stovetop or oven--braises.
How were the meatballs "fluffy"? Were they cooked in some liquid?

 
Meatballs were cooked in a marinara sauce diluted with chicken broth. They really were fluffy, in

fact, when I first opened the lid, they looked like big pillows. they settled down when I stirred them and put in the serving platter. I brought them to a party last night and was told by a few people how "fluffy" and "light" they were. They tasted great. But the texture was different from the ones that I have made either in the oven, or cooked directly in marinara sauce.

Stew is on the list for this week, along with soup!

 
Barb, can you tell me how exactly you made and cooked the meatballs?

no browning first, I suppose? Just added to pressure cooker with some sauce?

I have a regular pressure cooker and no issues to use it, as Brazilians are born with one nearby smileys/wink.gif
