1. (Well, this is from last night, but I'm still thinking about it, so it should still count.) smileys/wink.gif Went to Bar Etats-Unis with a friend for a mojito and made-on-the-spot guacamole. Yum.

2. Dying to make the Pear and Walnut Cake everyone is talking about...

3. Starting to crave pumpkin! Pumpkin muffins, pumpkin pancakes, pumpkin ravioli...

4. Found a tiny creperie about two blocks south of us!

5. Even though it's fall already, my cooking clock is still on summer time--which is why we're having broiled tuna, salad, and a baguette for lunch today.

6. Has anyone been to the Sunday cooking classes that Williams Sonoma offers? They're free, and I'm thinking of going to the next one, which is Bistro Suppers. Just curious if the offerings are the same around the country, or what the quality is like, etc.

 
My Saturday Six

1. Resolved my guest dinner dilemma for next week, which had been dogging me all this week. I like to plan ahead. smileys/smile.gif Plus, I'll be cooking at my Dad's house and am not sure what I'll find in terms of supplies. Better bring some stuff with me.

2. Made Ron in Worcester's Herb-Roasted Pork Tenderloin for dinner. Really good and so easy.

3. DH had asked me to make brownies and Coconut Sugar Cookies for a party we're going to today. So Last night made Coconut Sugar Cookies. I started adding the flour and DH called me into the living room to see what our cute baby was doing. I got back to my dough and couldn't remember how many cups of flour I'd put in and it wasn't evident from looking at it. So I put in one more, but turned out to be one too many because the dough wasn't right. So DH kindly calculated out for me how much I needed to add of everything else to make it come out right. By that time it was 11pm and I was sooooo tired. Baked most of them, saved some dough for later.

3. Baked brownies this morning. I always think I undercook them, but DH loves them fudgy and chewy.

4. The baby FINALLY went down for his nap. Not food related, but a critical moment in my life right now! I napped with him on the bed for a while. He wouldn't take his morning nap, so he was really tired and really fighting the afternoon nap.

5. Housewarming party tonight--so I don't have to come up with dinner. Yay!

6. Having some lunch with friends tomorrow. Soup, salad, bread, dessert. I'm bread. After the cookie fiasco, I'm going to rely on Wegman's for this one. And I'll get some Lurpak butter, which I love. If I'm up for it, I *might* make some cornbread to take. Wish I could find my grandmother's corn bread molds--they may still be in New Mexico, though.

7. Totally non-food related, but I'm really mourning the passing of Mary Travers. The music of Peter, Paul, and Mary was the soundtrack of my childhood, and she was always such a mother-figure to me. (Same age as my mom, too.) Her wonderful voice will be missed.

 
Lurpak butter? I'm stuck on Plugra, but it's getting harder to find (at any kind of decent price)

 
My Weekend Six

Wow, what a cook you are Amanda! How do you find time with a little baby?! Good for you.

1 - Made more of that tuna spread that I took to the 70's lunch the other day, for when the neighbors came over for cards last night. It's really good!

2 - NFR - brrrrrr, it's in the 30's here early this a.m.

3 - Went apple picking yesterday, Macs, Galas, Cortlands, and TWO Pipins - huge ones - and had the heater on for the way up, and the a/c on for the ride back. Trekking up those hills and carrying 20-lb bags of apples will do that to you. Now to use them before they go bad.

4 - Going to a see the Love Chef (from tv) cook this afternoon.

5 - Thinking of what else I can make and process now! I'm on a canning rampage. Maybe lemon curd? Crabapple jelly (from the crabapples I picked a couple of weeks ago)? Did I say I loved the fall?!

6 - After re-reading a recent post about plum cake, I made a plum-cardamom kutchen yesterday. I'd like to make the pear cake sometime too. And of course now I'll have to make the apple cake soon. So many cakes, so little time. ;o)

 
What tuna spread did you make?

In the 70's thread you mentioned a salmon spread, did you sub tuna? Here is one that I really like and would you post the one that you made? Thanks!

Tuna Spread With Capers

Serving Size : 8 Preparation Time :0:00
Categories : Appetizers Superbowl

Amount Measure Ingredient -- Preparation Method


8 ounces cream cheese -- softened
6 ounces canned tuna -- drained
2 tablespoons onions -- finely chopped
1 tablespoon capers
1 tablespoon worcestershire sauce
1/4 cup mayonnaise
1/4 cup chopped nuts -- if desired
1 loaf miniature party rye rounds
1 seedless cucumber -- thinly sliced
dill weed

Mix the first 6 ingregients and form into a long tube shape. Refrigerate at least overnight. Top with chopped nuts if desired. Slice and spread on the breads and top with a slice of cucumber. Sprinkle with dillweed to garnish.

NOTES : Make ahead at least 8 hours so flavors can meld.

My Sunday Six

1. I am making the dreaded oatmeal cookies for Bubba today.

2. Making deviled eggs because I was showing some one how to make molded eggs for Bento lunchs and it turns out that you need to use extra large or large eggs to work in the molds. So I have about a dozen hard-boiled eggs to use up. Not too hard on Football Sunday.

3. I have to get ready for my sister to come and visit. I thought it was this last Friday when it is actually this coming Friday. I will not live that one down anytime too soon. At least I might have the house ready this time!

4. I made some good guac last night. Just mashed up some avos with some hot salsa. Sprinkled it with garlic salt and put a layer of chopped cilantro on top. Everyone loved it, but did mention it was a little spicy. smileys/smile.gif

5. I also brought the Black Pepper Almonds which were inhaled by everyone. My in-laws hadn't had them before and really liked them. Send home all the leftovers with SIL, way too addictive to keep in the house.

6. I think some turkey soup with hot fresh bread will be our dinner tonight. I am so glad the weather has turned cool and it is soup season again.

My Sunday Six

1) Finish cleanig the house - DH's been out of town a good bit of the last two weeks so I've 'relaxed' a bit

2) Go get some more tomatoes at the FM before they are gone and can some more

3) Make some of those incredible 'faux' crab cakes of Nancy's - she did them for the $500 a plate Cooking Wild with Coach Jeff Fisher fundraiser - it's zucchini but you would swear you are eating a crab cake!

4) Make Ma Onie's chicken and dumplings - the coworkers have been begging me for them since I came back to work with them

5) Make some candied bacon toffee for work also

6) Figure out what I want to eat my last 'free' night - DH comees back Tuesday but I have dinner meeting tomorrow night. Wondering what the Sunday dinner at City House is and who I can talk into going with me.

 
Rec: Tuna-Cheese Pate

This was so good. Yes, basically it's the salmon spread, just subbed tuna for the salmon.

2 cans tuna in water, drained
2 8-oz cream cheese, softened (seems like a lot, but it really isn't - you want a mild tuna taste)
1/4 cup scallions, chopped
2 Tbsp prepared horseradish
3 Tbsp mayonnaise
4 tsp onion powder
1/4 tsp black pepper
2 tsp curry powder
2 Tbsp lemon juice

Whirl in a food processor until done (blender stick works great for this too). Spread on crackers or use as a dip for raw vegetables.

 
Make some applesauce with those Cortlands -- leave the skins on and freeze it. It is soooo good!

You can can it as well, but I would peel them to can them.
