Sea Food Antipasti

Focaccia: Rosemary and garlic

Starter:

Romaine lettuce and Caesar cup

Asparagus quiche

Rocket

Beetroot from Garden

Reduction pomegranate and balsamic

Main:

Salmon/dill baked

Hollandaise Sauce

Italian baked tomatoes

Sweet Potatoes baked rosemary, red onion, lemon juice

Dessert:

Rooibos, preserved fig and walnut Tart

I needed to come up with a healthy super-food meal for a guest, as I do not have .....

loads of cash to buy explicitly for A guest, I had to make do with what I had in the pantry......

Seafood Antipasti was bought....and tough (Italian brand)

Focaccia was a box I had for 'in case of'. It was OK but home made is much nicer (I am doing one for tomorrow night's dinnner.)

Caesar salad, as you know, would have a sauce on and as guest doesn't like sauces I served the lettuce standing up in a vase and the dressing in a bowl...I whizzed all the cheese into the dressing. This is a different way of serving caesar salad and always goes down a treat. (We usually wrap a focaccia slice in the lettuce before dipping.)

Guest wowed over the fact I had cooked her kind of food and (she who is lactose intolerant) cleaned her plate and even had a taste of all sauces!!!!

The sweet potato dish usually has squeezed fresh lemon just before serving, this time I used preserved lemon bits.

I enjoy this kind of meal myself.

 
I really need to get these from the library! I gave the whole set to my former MIL and she loved

them, and I read a few when she was done and love his stories. Have you read the ones about Scotland? They are likewise entrancing.

Yikes. I just checked my tea supply and I am OUT of rooibus! triple drat. I must get some soon as just reading these posts is giving me a hankering for some...

 
I do that with salad too! I call it a deconstructed salad...

I put the greens in a bowl, a tomato, and avocado, fennel, cucumber, whatever, a small knife and a bowl of dressing or just the oil and vinegar cruets. and a dish of Maldon salt and pepper.

We pass the knife back and forth carving off hunks of this and that, dipping lettuces and things in the dressing or making our own, such a convivial salad experience with friends.

Of course my friend Anna (who is Russian and has an interesting turn of phrase) said to me one, "What do you call this? A decomposed salad?". I promptly fell to the floor convulsed in laughter. Ah, friends are so lovely!!

 
Not at all -- the red zinger is like hibiscus tea, isn't it? Rooibos is also called

red leaf tea -- it is from a South African plant, and has a rich, smooth flavor. It really makes great iced tea!
