This comes from the Blue Bunny ice cream company. I like the variation.
Double Decker Mud Sandwich
Ingredients:
16 - BIG Mississippi Mud Ice Cream Sandwiches, 633865
12 ozs. ( 1 ½ cups) evaporated milk
12 ozs. (1 ½ cups) semi-sweet chocolate chips
0.50 oz. ( Tbsp) vanilla extract
1 oz. (2 Tbsp) prepared whipped chocolate topping
1 oz. (2 Tbsp) prepared chocolate sauce
Toasted whole and slivered almonds, optional garnish
Method:
Combine evaporated milk and chocolate chips in small saucepan. Cook over low hear stirring frequently, until morsels are melted. Remove from heat, stir in vanilla. Allow to cool to room temperature.
Once chocolate mixture has cooled begin to assemble dessert. Unwrap all BIG Mississippi Mud® Ice Cream Sandwiches. Cut each sandwich into 3 equal sections. Line bottom of a 2" half pan with ½ of the sliced sandwiches, all going in one direction (may not fit snuggly to side of pan). Spread cooled chocolate mixture on top of sandwiches keeping within ¼" of the outside perimeter of the layer. DO NOT allow chocolate mixture to run down outside of dessert. Top with remaining bars arranged in opposite direction. Top with prepared chocolate whipped cream. Place into freezer and allow to set.
Remove from Freezer and slice into 12 equal squares. Cover and return to freezer until ready to serve.
To serve: Pool 1 ounce (2 tablespoons) prepared chocolate sauce into center of plate. Remove one slice of dessert from freezer and place in center of plate. Garnish with toasted slivered and whole almonds, if desired. Serve immediately.
Makes 12 servings
VARIATIONS: Replace Mississippi Mud Ice Cream Sandwiches with BLUE NUNNY® Big Vanilla Ice Cream Sandwiches. Replace chocolate fudge filling with caramel with 16 ounces of raspberry jam and garnish dessert with fresh raspberries rather than almonds.
HINTS: This dessert is an excellent option for catering facilities.
