For those of you living here and those that travel through, an old Cincinnati tradition that we thought was lost has been reborn. The Schnecken (a pan of German gooeeeey buttery cinnamon rolls) at the 75-year old Virginia Bakery in Clifton were legend. The Thie family closed the bakery last year and that, we thought, was the end of Christmas morning Schnecken. The Thie's did a 14 hour proofing and a 24-hour rise of the dough that made an unbelievable difference in the Schnecken.
Busken's has bought the schnecken recipe from the Thie's, and Mr. Thie personally went over to download it from his head and train the Busken Bakery how to make it. Busken says they will continue to make it by hand the way the Virginia Bakery did.
Christmas morning will be complete once again.
