Searching for the ultimate homemade bagel recipe. I thought I'd try this one, I've tried about four

I've never made bagels, find the process so interesting. Similar or same recipe in an early Fine

Cooking magazine, with an article about making them. I wondered if the Cook's Illustrated version was among the recipes you have tried? I've seen good reviews of it.

 
This is my favorite bagel recipe. Have not tried the one you posted

I am all about old-fashioned, simple recipes and this is one I've made many, many times. No trendy ingredients, just good plain bagels:

BAGELS
4-4-1/2 c bread flour
2 pkg yeast
1-1/2 c water or 1 c water and ½ c dry white wine or beer
3 T sugar, 1 T salt
parmesan seasoning , herb seasoning, poppy seeds or whatever

In a large bowl combine 1-1/2 c flour and yeast. In small saucepan combine water, sugar, salt. Heat until warm and add to dry mix. Beat at low speed ½ min, scraping sides. Beat 3 min at high speed. By hand, stir in enough flour to make a fairly stiff dough. Turn onto floured board, knead till smooth and elastic- 8-10 min. Cover, let rest 10-15 min. Cut into 12 portions, shape into smooth balls. Punch hole in center with finger. Pull gently to enlarge to 1-1/2-2 “. Place on ungreased cookie sheet. Cover, let rise 20 min. Broil 5 inches from heat for 1-1/2-2 min on each side. Tops should NOT brown. In large kettle combine 1 gallon water and 1 T sugar. Bring to boil. Reduce heat to simmer. Cook 4 bagels at a time for 7 min, turning once. Drain on paper towels. Place on well-greased baking sheet. Bake at 375 for 25-30 min. until tops are brown.

 
I recall a few years ago, Flori Sandy was on a quest for bagel making. Anyone heard from her?
