Semantics aside, will it still be "Pimento Cheese" if I use a roasted red pepper?

I know I like sweet red bell peppers and I like roasted red peppers. I'm not so sure I'll like pimento peppers since I've never had one...or even seen one.

On the one hand, Melissa has me hankering (why am I using that word?) for a crispy, crunchy, hot grilled pimento cheese sandwich.

On the other hand I really, really don't want to blow 3 cups of cheese (when did cheese GET TO BE SO EXPENSIVE!) on a taste I won't like.

On the other other hand, I already have roasted red peppers and would like to experience a pimento sandwich. Finally, I'm hesitant to purchase the premade stuff since I know they can't be using the "good" cheese.

Okay...one last question: is cream cheese necessary? Some recipes include it, some don't.
