September has started! (Some F and NFR Sept. Six)

1) I've put August to bed, the month where my family eats whatever they can scrounge around while they patiently await my return from Day-Hiking Disease. This year was my 4th participating in the Washington Trails Association Hike-a-Thon and I hiked 101 miles in the month of August!

2) School starts day after tomorrow. So naturally we're going back-to school shopping for supplies. Today. Heh.

3) I have some great salmon my dad caught, and am playing with the idea of a Salmon, Leek, and Fennel Chowder. A thin one, I think, no thickeners. I'm looking forward to posting on the Soup Blog again.

4) My youngest has joined the Swim Team and appears to be perpetually starving to death. We're questing for great post-swim snacks that are filling and healthy. More challenging than it sounds, really.

5) I'm resolved (as I am every school year) to at least START the year with interesting lunch boxes. Why is it by April we end up with the same stuff day after day?

6) And finally, I'm excited to start our tradition of a hot breakfast every morning before school. The girls are looking forward to Dutch Babies with Blueberry Sauce on Wednesday morning.

How about chicken kababs, cheese straws, mini-pizzas on Eng muffins,

peanut butter muffins, berries, Greek yogurt with fresh fruit, nuts, hummus with cut-up vegetables, deviled eggs, protein, protein! ;o)

 
Hi Carianna - for post swimming, do you neede something that can be eaten on the spot

or will it be at home?

These granola bars are really great, portable, and you can add different ingredients to your liking. They last for a very long time in the fridge, and travel well.

I was also going to suggest some veggies and hummus, or if your child likes salad, that is very flexible and portable.

Here is the granola bar thread - they are from Marsha. My tweaks are further down in the thread - I will definitely increase the nut butter and decrease the sweetener from the way it is written. I think almond butter would be a great sub for peanut butter or a 50/50 mixture of them.

Congratulations on your hiking achievement - that's a whole lot of miles!

My son started on swim team in Renton when he was 7 and

continued swimming until he went into the Air Force. 6'1 and NEVER full so I know what you mean.

 
He needs to increase his calorie and carb intake including

lots of fruit and vegetables. Dark meat chicken and don't forget nuts.

 
re: Hot breakfast....have you ever tried the make-ahead french toast?

You make up a big pan full, keep it in the freezer and bake as needed. My girls loved this. Serve with syrup, jam, or with peanut butter between the two slices.

Grammy’s French Toast

This is great because you can bake it straight from the freezer in about 10 minutes

8 eggs
1 cup half & half
2 Tbl. sugar
1 tsp. vanilla
1/4 tsp. nutmeg (I don’t like nutmeg, so I use cinnamon)
1 loaf french bread, unsliced

1. Cut french bread in thick slices (at least 1” thick). Lay them in a single layer in a large shallow baking pan. 2. Mix together the rest of the ingredients with a wire whisk and pour over bread. Using a fork, gently lift and flip over each piece while tilting pan to be sure each piece is well coated. Do this until most of the egg mixture is absorbed into the bread. Place in freezer until firm - at least a couple of hours.
3. With spatula, remove each piece from pan and place in a zippered freezer bag.
4. To bake: heat oven to 450 deg. Butter both sides of a frozen toast and place on baking sheet. Bake about 10 minutes until well browned. If you are doing this in a toaster oven, place the buttered toast on a square piece of foil and place in toaster oven.

Note: if you want to eat some of this right away, you can cook it right after the soaking process in step 2.

 
Thanks to you and orchid for the swim advice... she is starving

immediately after, so I've been thinking of snacks that will sit in a cooler and can be eaten on the way home. The pool they swim in is 30-45 minutes away from home. Plus they have practice AFTER dinner. 6:30-8:30 Tue and Thur and 7-9 on Mon and Wed. So she'll have had some sort of dinner before, but not too heavy, and then will exercise like crazy, and then eat in the car on the way home. I will totally check out the granola bars. She likes granola bars.

And somewhere in there we have to squeeze in homework. She's a freshman this year. How do I have 2 in high school already?

 
I keep home made French toast and blueberry pancakes in my freezer all year long for my

hubby, who tends to loose weight easily. Both freeze and reheat beautifully.
