I had my eye on this recipe because I have yet to find gluten-free lasagna noodles. The major raves on Epi are spot on. I couldn't find broccoli rabe so I used the mixed hearty greens from Trader Joes (I think it has collard, mustard, spinach, etc. Would do that again.)

Ah, and I should say, I substituted Gluten-free flour for both the crepe and the bechamel with great success in this recipe. This is an enthusiastic keeper!

Oh my! Right up my alley. I'm thinking Swiss chard would work. I can't find rabe here, not even

at Whole Foods. Thank you for posting it.

 
If you can find "Broccolini" or Gai Lan (Chinese broccoli). . .

Broccolini is a broccoli-kale cross; the stuff I have grown is sweet, tender and delicious, much better than the broccoli in the stores.

Gai Lan, Chinese Broccoli, has a bit of a bitter edge, similar to Rabe, but not quite as bitter. I'm thinking it would be great in this recipe.
